Absolutely yummy! The nutty flavor of the buckwheat made this bread taste less grainy. We usually enjoy breads which includes some type of nuts, seeds.
Have to credit to Bernd Bakery for this great loaf! We enjoyed it with gouda! Bernd Bakery's website includes the recipe in German and English. His website has nice, detailed guides on making bread cultures.

Steinhorster Meal Bread with recipe from Ketex
My first blog! I made Steinhorster meal bread, essential. The modifications I made were to add whole wheat bread starter in place of the preferment. I didn't have 5 to 7 grain cereal so I substituted a mix of rye, wheat and oat flakes.
The dough was wet, sticky, I added extra flour to dry it out.
Overall a great recipe, I did a slow rise in the refrigerator, which made the dough easier to handle prior to baking.

I have Gerhard Kellner's book and wish there were an English translation. He recipes are top notch!
